Tandoori Marinade

Warm summer evenings, cool breeze and a clear open sky. You know what this inspires me to do? Make a barbecue for my friends and family to enjoy. I bring to you one of my recipes to make the yummiest tandoori marinade.

Ingredients:

For the marinade:

  • Greek yogurt – 150g
  • Coriander powder – 1 tbsp
  • Garam masala – 1 tbsp
  • Turmeric powder – 1 tbsp
  • Cumin powder – 1 tbsp
  • Kashmiri mirchi – 1 tsp
  • Salt – 1 tbsp
  • Minced garlic – 1 tbsp
  • Minced ginger – 1 tbsp
  • Lemon juice – 1/2
  • Kasuri methi – 2 tbsp crushed
  • Paprika (optional) – 1 tbsp
  • Deep orange food colouring (optional) – a couple of drops

For the main (vegetarians):

  • Cottage cheese
  • Sweet peppers
  • Onions
  • Cauliflower

For the main (non-vegetarians):

  • Chicken
  • Cod

METHOD:

  1. Mix the marinade ingredients together.
  2. Add in the main and let it sit in the fridge for at least 4 hours before the barbecue.
